Sexy Salad Bowl
INGREDIENTS
Base Salad Ingredients
1 to 2 cups of fresh greens. I use organic spring mix greens. You may also like buttered lettuce
Olive oil, one cap full
Traditional balsamic vinegar
1/2 cup cooked quinoa
1/2 cup of protein (cooked beef burger, crumbled or bacon, grilled chicken etc)
Topping Ingredients
1 avocado, diced
1 boiled egg, quartered
1 - 2 strips of bacon, cooked & chopped
Optional seasonings: garlic powder, onion powder, dried oregano, and dried parsley
Dressings: 1/4 cup of hummus, 1/2 lemon (juiced), 1 tbsp of olive oil salt, pepper to taste.
Optional: Pomegranate for color and chia seeds for crunch! Both are very nourishing.
PREPARATION
Place heaping handfuls of clean greens on a plate.
Season your greens with the dry seasons.
Drizzle with olive oil and (really good) traditional balsamic vinegar.
Add the additional base salad ingredients, finishing with the cooked meat protein.
Yes, we want all of these hearty toppings on top! So add your bacon, and your boiled egg, then top it off with the diced avocado.
Whisk your dressing ingredients together in a small bowl, then drizzle this delicious dairy-free creamy dressing on top.
Finally, sprinkle a pinch of pomegranate seeds.
