Fast “Baked” Sweet Potatoes

Ready in 20 minutes

Serves 4 - 6

INGREDIENTS

  • 4 - 5 Organic sweet potatoes, medium to large in size

  • 2 cups of water

    TOPPINGS

  • Grass-fed butter, Ghee, or Vegan butter

  • Organic Cinnamon

EQUIPMENT

Electric Pressure Cooker (I like the Instant Pot)  with wired stand insert

PREPARATION

Wash and clean the organic sweet potatoes, cutting off the ends.

  1. Wash and clean the organic sweet potatoes, cutting off the ends.

  2. Pour two cups of water into your steel insert inside of the pressure cooker

  3. Place the wired stand in the base of the insert.

  4. Place the sweet potatoes on the wired stand. Stack the sweet potatoes if needed.

  5. Close the top. Make sure the steam is set to seal.

  6. Turn on the instant pot pressure cooker by selecting “manual” and setting the time to 20 minutes.

  7. Once the timer has reached 20 minutes to indicate the potatoes are cooked, carefully turn the knob to release the steam. Be careful not to have your face or hand near the steam valve.

  8. Unscrew the top to open the pressure cooker and set the top aside to allow the steam to release fully. 

  9. Enjoy the sweet potatoes with vegan butter, cinnamon, or plain (my preferred way)!
